É um símbolo. Em árabe, significa “de cabeça para baixo” — porque é assim que é servido: arroz, carne e legumes cozidos em camadas, que depois são virados com firmeza sobre a travessa. Mas quem foi virado de cabeça para baixo? O povo palestino, que há 77 anos sofre com a Nakba, a catástrofe que começou em 1948 com a expulsão de mais de 750 mil palestinos de suas terras. Até hoje, ocupação, bloqueios e violência tentam apagar sua existência. Mesmo assim, famílias seguem cozinhando maklub. Em Gaza, na Cisjordânia, nos campos de refugiados, na diáspora. Cada panela é um ato de memória. Cada travessa, um gesto de dignidade. Cozinhar é resistir. Comer é não esquecer. Enquanto o mundo tenta calar a Palestina, o maklub segue dizendo: “Estamos vivos.
